Lemon Rice Recipe


Lemon Rice is the easiest recipe that I do whenever I am lazy to cook. Lemon rice is popular in South India. When I was a kid my mom will pack this for lunch occasionally whenever we go outing (to spend the day) to nearby places, wrapped in banana leaves with coconut chutney/thohail as side dish. That’s a perfect combination…



Lemon Facts:
Lemon contains Vitamin C. It is used for common cold and for the treatment of Kidney stones. It is used as a refreshing drink. Its uses are not limited to skin and hair. Have a good lemonade, it will help stay calm and cool.

Lemon Rice Recipe

Ingredients:

Cooked Rice – 2 cups
Lemon - 2

Tempering:

Gingely Oil                         
– 3 to 4 tbsp
Mustard seed        
– ½ tsp
Urad Dal
– 1 tsp
RedChilly    
– 2
Peanuts
– 2 tbsp
Channa Dal
– 1 tbsp
Green Chilly
- 2
Turmeric Powder
- ½ tsp
Asafoetida
- 1 Generous Pinch
Curry leaves
– few


Preparation:
  1. Cook Rice with 2 cups of water or as you normally cook. I used sona masoori rice. You can use basmati rice too. Allow the rice to cool
  2. Extract the lemon juice without seeds. (I used 2 lemons here because the lemons are not sour. Use the number of lemons as you like.). Heat oil in a pan and add items under tempering and do not burn the dals. (Keep the flame in medium to high)
  3.  Once the dal becomes slightly brown, remove from heat and add lemon juice. Pour this mixture into the cooked rice.
  4. Stir thoroughly until the rice is mixed well.    

Notes:

     You can add cashews while tempering.


We had it with potato fry. Serve it with any side dish of your choice.
