Dates Payasam Recipe - dates Payasam is an Indian delight made from dates, sugar and milk. The recipe is easy and you can prepare it in no time. I tried this recipe and it came good. The original recipe called for Coconut milk but I have used whole milk in this recipe. You can replace the whole milk with coconut milk if you like.

INGREDIENTS
- Dates - 1 cup
- Milk - 2 1/2 cups
- Sugar - 1/4 cup
- Cashews - 6 to 8
- Ghee - 1 tbsp.
- Cardamom powder - 1 tsp.(Optional)
PREPARATION
- Grind the dates with enough milk to grind in a mixer/food processor to a coarse paste.
- Heat oil in a pan with little ghee and saute cashews in it till golden brown and remove them in a separate plate/bowl.
- Add the ground dates and milk paste in the same pan used for roasting the cashews and stir them by adding all the remaining milk.
- Then add sugar to it. Stir them well and boil it till the bubbles appear.
- Then add the roasted cashews and stir them well and switch off the flame.
Step By Step Recipe with Pictures
Add the seedless dates to the mixer/food processor and remove any hard parts if found.Add little milk to the dates, say 1/2 cup milk so that it can grind well.
Grind the above to a coarse paste or fine paste as you like. i would like it to be coarse paste.
Heat ghee in a pan and add cashews to it.
Saute them till the cashews are slightly golden brown.
Now remove the cashews from the pan and add the ground dates paste to the same pan in medium heat.
Add some milk to the pan.
Now add the sugar to it and stir it well.
Now add all the remaining milk and let the mixture to cook in low to medium flame. Bubbles will start to appear. Keep stirring for 5 minutes.
Now add the roasted cashews and powdered cardamom, stir them well and switch off the flame.
serve warm or cold with chopped almonds and pistachios or even with dates decorated on it.

- You can use coconut milk instead of whole milk in the recipe.
