Carrot cake - Carrot cake with cream cheese frosting. We love carrot cakes that too a moist carrot cake. This carrot cake is a soft one with carrots, walnuts and cream cheese frosting. I made this carrot cake for our anniversary. Hubby likes carrot cake very much. This was in my baking wish list, so I could bake him. Finally I made this for our anniversary and hubby was very much impressed with the outcome. This carrot cake recipe gives you a satisfied result. So be sure to try this one. This is my first cake apart from the banana walnut bread .

Carrot Cake with Cream Cheese frosting
A must try Carrot cake recipe with walnuts and cream cheese frosting

Ingredients
- 2 cups all purpose flour
- 2 teaspoons powdered cinnamon
- ½ teaspoon salt
- 1 teaspoon baking soda
- 3 cups shredded carrots
- 1 ½ cups sugar
- 1 cup chopped walnuts
- 1 cup oil(used canola oil, can use vegetable oil instead)
- 1 teaspoon vanilla extract
- 3 large eggs
- For Cream Cheese Frosting
- 4 cups confectioners sugar(powdered sugar)
- 8 oz. softened cream cheese(1 package)
- 3 teaspoon milk
- 1 teaspoon vanilla extract
- ¼ cup softened butter
Preparation
- Get all the ingredients ready. Preheat the oven to 350 degrees F. Grease the bottom and sides of two 9 inch round pans with butter/(ghee i.e, clarified butter) and lightly flour it.
- Beat all the liquid(wet) ingredients oil, egg, sugar and vanilla extract in a large bowl. Don't beat it too much. Do it only until they are mixed well
- Whisk in another bowl all the dry ingredients flour, cinnamon powder, salt and baking soda. Now add this flour mixture to the egg mixture and beat it with an electric mixer until they are incorporated. Now fold in the shredded carrots and chopped walnuts with a spatula. Bake the cake
- Pour the cake mixture into two 9 inch round pans for layered cake.
- Bake them for 35 minutes or until toothpick inserted comes out clear.
- Cool the cake with the pan for 5 minutes and then invert the cake onto cooling rack and cool it completely. It takes about an hour. For Cream Cheese Frosting
- Beat cream cheese, milk, vanilla extract and butter in a mixing bowl until they are creamy. Then beat powdered sugar with the cheese mixture by adding 1 cup at a time.
- Beat them until they are creamy and easy to spread frosting.
- Separate a little portion of frosting and and food coloring if desired. Now layer the cake and fill with frosting and spread it all over and make designs with colored frosting.

Get all the ingredients ready for our delicious carrot cake so we can proceed with ease. Preheat the oven to 350 degrees F. Grease the 2 round inch pans(for layered round cake) with butter/clarified butter(ghee) and lightly flour it.

Put the sugar into a large bowl, break the eggs into it and pour the oil to the same bowl.

Beat the until they are smooth and add vanilla extract to it. You can also add the vanilla extract along with eggs. I forgot to add, so adding now. Beat the vanilla extract with them.

put the flour, salt, baking soda and cinnamon powder to another mixing bowl.

Whisk them together until they are mixed well.

Add the flour mixture to the egg and sugar mixture.

Now beat them with the electric mixture until they are incorporated.

Throw the carrots and walnuts to the mixture.

Fold them to the cake mixture with a spatula.

Pour equal amounts of cake mixture into two greased pans.

Bake them in the preheated oven for 35 minutes or until a toothpick inserted comes out clear. The timing depends on your oven. Cool the cakes in the pan for 5 to 10 minutes.

Then invert the cakes to the cooling rack and cool it completely for an hour or more.

Once the cake is cooled down, let's prepare for the frosting. Unwrap the butter and cheese to a mixing bowl and also pour the milk and vanilla extract to the same bowl.

Then cream them by beating it with electric hand /stand mixer.

Then add 1 cup of sugar at a time and beat them until they are a smooth frosting to spread.

Now atlast we are going to frost the cake . Place a cake in a decorating plate and spread the frosting over the cake.

Now place the other cake over the frosting to form a layered carrot cake.

Apply the frosting all over the cake now. here is cake going to be finished frosting. reserve some frosting for decorating with colors if you desire.

Voila! Here is the frosted cake. I frosted my entire cake with a pizza spatula... wow..

Now add the desired food coloring for your customised design. I added red food coloring first. But I don't want red carrot carrot cake. So I added orange Indian food coloring powder and got the orange color frosting below. I really wished to share all the designing process but that would involve more steps and more scrolling . So I have just given the final photo of frosted cake.

Here is the eaten cake. I made this carrot cake with cream cheese frosting for our anniversary. Before eating I added a green point of frosting in the center, you can see that in the below picture because hubby wanted a greeen touch to the carrot cake.
